Chocolate Chip Brownies
Serves: Makes Approximately 16 Brownies
 
Ingredients
  • ¼ cup unsalted butter, melted
  • ⅓ cup unsweetened cocoa powder
  • 2 eggs
  • ⅓ cup tabletop stevia
  • ⅓ cup granulated sugar
  • ½ cup whole wheat flour
  • ½ cup all-purpose flour
  • 1 tsp. baking powder
  • ⅛ tsp. salt
  • ¼ cup vegetable oil
  • ¼ cup buttermilk
  • ¼ tsp. vanilla extract
  • ¼ cup semi-sweet chocolate mini chips
Instructions
  1. Preheat oven to 350 degrees F. Prepare an 8-inch square baking pan with non-stick spray and set aside.
  2. Combine melted butter and cocoa powder and stir until smooth. Set aside.
  3. In a large bowl, beat eggs until frothy. Add tabletop stevia and sugar and beat until well blended.
  4. In another bowl, combine flours, baking powder and salt. Whisk until evenly mixed.
  5. Combine dry ingredients with egg mixture and stir. Add in cocoa mixture, vegetable oil, buttermilk and vanilla. Stir until well blended. Stir in mini chips.
  6. Pour batter in prepared baking pan and spread evenly in pan. Bake at 350 degrees for 20 minutes or until a toothpick inserted in the center of the pan comes out clean.
  7. Remove from the oven and cool completely. Cut brownies into 16 squares.
