Sweet & Spicy Holiday Snack Mix
Serves: Makes 6 servings
 
Ingredients
  • 2 packets tabletop stevia
  • 2 tsp. fresh thyme, chopped and divided
  • ¾ tsp. kosher salt
  • ½ tsp ground cinnamon
  • ¼ to ½ tsp. ground red pepper
  • ½ cup pecans
  • ½ cup blanched almonds
  • ½ cup dried cranberries
  • 1½ Tbs. butter
  • 1 cup of your favorite puffed cereal, (such as Puffins)
  • 2 cups puffed rice or kamut cereal
  • 2 Tbs. honey
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine stevia, 1 teaspoon of thyme, salt, cinnamon and red pepper in a small bowl.
  3. Combine pecans, almonds, puffed kamut on a baking sheet. Bake at 350 degrees for 10 minutes or until the nuts begin to brown.
  4. Combine the pecan mixture and butter in a medium bowl, string until better melts.
  5. Gently stir in pretzels, puffed cereal and honey. Sprinkle the spice mixture evenly over the nut mixture; toss gently to coat.
  6. Spread nut mixture in a single layer on jelly-roll pan. Bake at 350 degrees for 10 minutes, string once. Sprinkle with remaining 1 teaspoon of thyme.
  7. Let cool completely and serve.
