Amish Style Baked Oatmeal with Fruit and Nuts
Ingredients
  • 2 cups old-fashioned rolled oats (not instant)
  • 1 cup walnuts or pecans (separated)
  • 10 packets stevia
  • ½ cup craisins
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • ½ tsp salt
  • 2 large eggs
  • 2 cups milk
  • 1 tsp vanilla extract
  • 4 Tbs unsalted butter (melted) and a little extra
  • 2 sweet baking apples (tart)
Instructions
  1. Preheat oven to 325F. Grease an 8-10 inch baking dish with butter
  2. In a bowl, mix oats, stevia, half the nuts, craisins, baking powder, cinnamon, and salt
  3. In another bowl whisk the eggs. Then stir in the milk and vanilla until it is consistent
  4. Add the milk mixture to the oat mixture. Slowly add melted butter while stirring
  5. Place apples evenly on bottom of the baking dish
  6. Pour mixture evenly on top of apples
  7. Sprinkle remaining nuts on top
  8. Bake for 40-45 minutes or until the top is golden
