Kulfi Recipe
Serves: Makes 10 Servings
 
Ingredients
  • 4¼ cups full fat whole milk
  • ½ cup heavy cream
  • ⅓ cup cane sugar
  • 4 tbs nonfat milk powder
  • 6 g unshelled, unsalted pistachios, crushed ( 5 nuts )
  • 1 tsp rose water
  • ¼ tsp Cardamom powder
  • 6 packets of stevia
Instructions
  1. Grind pistachios and almonds to small pieces and set aside.
  2. Disperse rice flour and carageenan in designated milk (45 g) and set aside.
  3. Weigh all other ingredients separately and set aside.
  4. In a saucepan, heat milk on a low flame for 25-30 minutes. Stir continuously to prevent scorching.
  5. After 25-30 minutes, add sugar and stir.
  6. Dissolve sugar and simmer for 5 minutes.
  7. Slowly and rice flour slurry while stirring. Continue stirring to prevent lumps. Simmer for 5 minutes.
  8. Add evaporated milk and simmer for an additional 5 minutes.
  9. Remove from heat and add pistachios, almonds, saffron, and rose water.
  10. Allow the mixture to cool completely.
  11. Pour into molds and freeze.
  12. Remove molds from freezer frequently and shake thoroughly to prevent the formation of large ice crystals
