Apple Cinnamon Snack Bars

Ingredients
  • Dough
  • 1 ¼ cups all purpose flour, unbleached
  • ¾ cup whole wheat flour
  • ¼ cup rolled oats
  • ¼ cup wheat bran
  • ⅔ cup milk
  • 4 tbs. unsalted butter, cold and cubed
  • 2 tsp. molasses
  • 1 tsp. baking powder
  • ½ tsp. salt
  • ¼ tsp. ground cinnamon
  • 1 tsp. vanilla extract
  • 12 packs stevia (PureVia)
  • Filling
  • 1 cup apple sauce, unsweetened
  • ¼ tsp. ground cinnamon
  • 5 packs stevia (PureVia)
Instructions
  1. In a food processor, add all purpose and whole wheat flours, rolled oats, wheat bran, baking powder, salts, cinnamon, and stevia. Pulse 10 times.
  2. Add cubed butter to the food processor and pulse an additional 10 times.
  3. With the motor running, add milk and vanilla extract to the food processor. Process until the dough starts to come together.
  4. Remove the dough from the food processor and gently knead by hand to ensure that the dough is uniform.
  5. On parchment paper, divide dough into 4 equal pieces and flatten each portion into ⅛ inch strips. You should have 4 strips with ⅛ inch thickness and they should be about 4 inches wide.
  6. Wrap each strip in plastic wrap and refrigerate for about 30 minutes.
  7. In a saucepan, combine apple sauce, cinnamon, and sugar over medium heat.
  8. Heat until the mixture comes to a boil.
  9. Boil for 3 minutes, stirring occasionally.
  10. Remove from heat, and allow the mixture to cool completely.
  11. Preheat oven to 350 deg. F. Line a baking sheet with parchment paper.
  12. Remove dough from the refrigerator.
  13. Cut each strip in about 3 inch increments. You should have 3-by-4 inch pieces. Set extra dough aside, as this can be rolled again and sectioned off for additional bars.
  14. Place about ¾ tsp of apple cinnamon filling in the center of each 3-by-4 piece, being careful not to get filling on the edges. Fold the dough over the filling, so that the ends meet, and gently press the dough together along the edges to seal in the filling.
  15. Repeat this process until all dough and filling has been used.
  16. On the lined baking sheet, space bars 1 inch apart. Bake for 16-18 minutes, or until golden brown.
  17. Serve warm or cooled.
