Serves: Makes Approximately 16 Brownies
Ingredients
- ¼ cup unsalted butter, melted
- ⅓ cup unsweetened cocoa powder
- 2 eggs
- ⅓ cup tabletop stevia
- ⅓ cup granulated sugar
- ½ cup whole wheat flour
- ½ cup all-purpose flour
- 1 tsp. baking powder
- ⅛ tsp. salt
- ¼ cup vegetable oil
- ¼ cup buttermilk
- ¼ tsp. vanilla extract
- ¼ cup semi-sweet chocolate mini chips
Instructions
- Preheat oven to 350 degrees F. Prepare an 8-inch square baking pan with non-stick spray and set aside.
- Combine melted butter and cocoa powder and stir until smooth. Set aside.
- In a large bowl, beat eggs until frothy. Add tabletop stevia and sugar and beat until well blended.
- In another bowl, combine flours, baking powder and salt. Whisk until evenly mixed.
- Combine dry ingredients with egg mixture and stir. Add in cocoa mixture, vegetable oil, buttermilk and vanilla. Stir until well blended. Stir in mini chips.
- Pour batter in prepared baking pan and spread evenly in pan. Bake at 350 degrees for 20 minutes or until a toothpick inserted in the center of the pan comes out clean.
- Remove from the oven and cool completely. Cut brownies into 16 squares.
