Ingredients
- 3 lb clementines
- ¼ tsp lemon juice
- 1 tbs liquid pectin
- 8 packets stevia (PureVia)
Instructions
- Peel the clementines, and remove as much of the white pith as possible.
- Juice the peeled clementines in a juicer, or, alternatively, blend and strain them.
- This should yield about 2 cups of juice. Dispose of the remaining skins and seeds.
- Add stevia and pectin to the juice and mix well.
- Pour the liquid into an ice cream maker.
- Allow the mixture to chill for about 20 minutes, scraping the blade and stirring frequently.
- Serve immediately or transfer to a sealed container and freeze.
