Orange Madeleine Cookies

Serves: Makes 12 Servings

Ingredients
  • 1 tsp baking powder
  • Dash salt
  • ¾-cup all-purpose flour
  • 2 large eggs
  • 6 packs of stevia tabletop
  • 2 tbsp. honey
  • 2 tsp orange zest
  • 6 tbsp. unsalted butter, melted
Instructions
  1. Place baking powder, salt, and flour in a small bowl, whisk to combine thoroughly.
  2. In a medium mixing bowl, combine egg, stevia, honey, and orange zest whisk mixture until smooth.
  3. Slowly whisk dry mixture into egg mixture.
  4. When mix is just combined gently whisk in melted butter.
  5. Place batter in fridge for at least 1 hour in the refrigerator.
  6. Batter should be stiff and fluffy.
  7. Preheat oven to 400F.
  8. Gently place one tablespoon of batter in a Madeleine pan that has been oiled and floured.
  9. Place tray in the center of oven.
  10. Bake until cookies are golden brown, about 9 minutes.
