Serves: 6.5 cups
Ingredients
- 6 cups blueberries
- 3 tbsp cornstarch
- 2 tsp ground cinnamon (divided)
- 6 packets of stevia tabletop
- ¾ cup old-fashioned oats
- ¼ cup oat flour
- 2 tbsp pure maple syrup, room temperature
- 1 ½ tbsp unsalted butter, melted
Instructions
- Preheat the oven to 350°F.
- Coat an 8’’ square pan with butter or non-stick spray.
- In a medium bowl, prepare filling by tossing blueberries, cornstarch, 1 teaspoon cinnamon, and stevia.
- Pour contents into prepared pan.
- To prepare topping combine oats, oat flour, and remaining cinnamon in a small bowl. Pour in the maple syrup and melted butter. Try to coat oats evenly as possible. Sprinkle topping evenly on top of filling.
- Cover the pan with aluminum foil and bake covered for 20 minutes at 350°F and then uncover and bake for an additional 20 minutes or until bubbly and topping is toasty.
- Serve warm; top with vanilla ice cream for an extra treat.
