Blueberry Crumble

Serves: 6.5 cups

Ingredients
  • 6 cups blueberries
  • 3 tbsp cornstarch
  • 2 tsp ground cinnamon (divided)
  • 6 packets of stevia tabletop
  • ¾ cup old-fashioned oats
  • ¼ cup oat flour
  • 2 tbsp pure maple syrup, room temperature
  • 1 ½ tbsp unsalted butter, melted
Instructions
  1. Preheat the oven to 350°F.
  2. Coat an 8’’ square pan with butter or non-stick spray.
  3. In a medium bowl, prepare filling by tossing blueberries, cornstarch, 1 teaspoon cinnamon, and stevia.
  4. Pour contents into prepared pan.
  5. To prepare topping combine oats, oat flour, and remaining cinnamon in a small bowl. Pour in the maple syrup and melted butter. Try to coat oats evenly as possible. Sprinkle topping evenly on top of filling.
  6. Cover the pan with aluminum foil and bake covered for 20 minutes at 350°F and then uncover and bake for an additional 20 minutes or until bubbly and topping is toasty.
  7. Serve warm; top with vanilla ice cream for an extra treat.
