Amish Style Baked Oatmeal with Fruit and Nuts
Ingredients
- 2 cups old-fashioned rolled oats (not instant)
- 1 cup walnuts or pecans (separated)
- 10 packets stevia
- ½ cup craisins
- 1 tsp baking powder
- 2 tsp cinnamon
- ½ tsp salt
- 2 large eggs
- 2 cups milk
- 1 tsp vanilla extract
- 4 Tbs unsalted butter (melted) and a little extra
- 2 sweet baking apples (tart)
Instructions
- Preheat oven to 325F. Grease an 8-10 inch baking dish with butter
- In a bowl, mix oats, stevia, half the nuts, craisins, baking powder, cinnamon, and salt
- In another bowl whisk the eggs. Then stir in the milk and vanilla until it is consistent
- Add the milk mixture to the oat mixture. Slowly add melted butter while stirring
- Place apples evenly on bottom of the baking dish
- Pour mixture evenly on top of apples
- Sprinkle remaining nuts on top
- Bake for 40-45 minutes or until the top is golden
